Auntie Pat's ginger biscuits
My mum's wonderful aunt lived up the road from us when I was growing up. She was an amazing baker, my sister and I would go up to Auntie Pat's house after school once a week where we would bake with her. This was one of our favourite things to bake and my sister Steph only reminded me of it yesterday. During this period of lockdown it is a great recipe to do with kids - easy and quick, with ingredients from the cupboard, not to mention yummy and the wonderful smell of ginger wafts throughout the house - you will be making this on a weekly basis from now on!

110g butter
2 Tbsp golden syrup
175g self rasing flour
Pinch baking powder
1 Tsp ground ginger
75g caster sugar
Method
- Melt butter and golden syrup in a large saucepan.
- In a bowl add flour, baking powder, sugar and ginger and stir together. Make a well in the centre and pour in the golden syrup and butter mixture.
- Stir together to make a dough.
- Roll into balls about the size of a walnut and bake in the middle shelf of a pre-heated oven 190°C (170°C fan) mark 5 for 10 to 12min, until lightly golden brown.
Second time around on Auntie Pat’s ginger biscuits. Yummy. I did double the ginger this time.
