Ben's avocado & poached eggs

My husband Ben has a number of absolutely delicious dishes that he makes - a current favourite and one that he does a few times a week is his avocado and poached eggs. We have a competition with my dad on the best poached eggs and I have to say it is a close call between Dad, Ben and my middle son Sam. My eldest attempted one the other morning and it was a pitiful attempt! Breakfast with three teenagers ranges from 8am - 11am. Term time it's a different story but at the moment in lockdown I have loosened the reins somewhat! We are the smack bang in the middle of cancelled A Levels and GCSEs- so a double whammy in this house like so many others. Back to the recipe. One of Ben's finest.... it is delicious. 




To serve 4

Ingredients

4 eggs

2 small ripe avocados

1/2 shallot or 3/4 spring onions finely chopped

6 cherry tomatoes quartered

1 chilli (deseeded if you would like it mild, we leave most of the seeds in for an extra kick)

Squeeze of lime or lemon juice

Salt and pepper to season

Toast of your choice - we live sourdough bread

Method

Chop shallot and chilli into a dish, add the avocado and mash together.
Add in the lime or lemon juice .
Throw in the cherry tomatoes.
Season well with sea salt and freshly ground black pepper
Generously spread avocado mix on toasted sourdough or any bread you have to hand.
Poach an egg for 3 minutes in a shallow pan of boiling water with a dash of vinegar.
Drain carefully and place on top of the avocado toast, season and tuck in.
