Gerry’s cheese and spicy bread
This is a recipe from my Dad, he is a fantastic cook and he is always
looking for new and spicy recipes to make. He lives in Dublin where at the moment
the over 70s are cocooning so my fab siblings bring him the Irish Times and some
food every day and as payment he has been known to make this bread to trade. We
spend many hours chatting about recipes and food. In this time of lockdown with
me here in the UK and dad at home – those hours have been invaluable. Irish soda
bread is a staple of Irish home cooking- it is delicious served with masses of Kerrygold
butter and Irish Smoked salmon or with good old marmalade. This is a modern
version with the addition of chillies not sure what the traditional Irish folk
would have thought but I think they would have thoroughly enjoyed the kick!
Dad tells me it is spicy so be warned!
250g Strong white flour.
250g wheatmeal flour.
100g Oats.
125g Grated Cheddar cheese
2 tsp chili flakes. (at least)
3 tsp dried herbs.
Some finely chopped fresh Coriander, or whatever herb one likes.
1tsp bicarbonate of soda.
1tsp salt.
25g butter, soft or (melted easier)
500ml buttermilk.
Method
- Mix all dry ingredients well, can use wooden spoon, add soft or melted butter, then add Buttermilk.
- Thoroughly mix all ingredients.
- Add all to greased rectangular non-stick baking tin.
- Place in oven 180º C for 50 mins.
