Lockdown meal planning
Cooking during lockdown is no easy feat - the lack of ingredients, the scarce trips to the supermarket and the fact that feeding a family is a 24/7 activity. With three growing teenagers and a range of meals to produce it is a challenge to say the least. I have decided to add my menu plans here if it can help in anyway.
Thursday is generally my shop day where I have planned the weekly meals with a military strategy. Whether or not I will get the ingredients I need is not always guaranteed but usually substitutions can be found. I am using my local butchers for meat as well as fish mongers who will deliver. Where you can shop local, do as it makes a massive difference to your community. I am using as much pantry staples as possible and most ingredients are available from your supermarket.
I have roped in my kids as sous chefs and so home schooling in a different manner but I figure they are still learning. Not to mention days are long in lockdown! Week day meals tend to be a more simple affair and the addition of dessert at the weekend to elevate mealtimes! We have started poker nights on Fridays and restaurant dinners on Saturday nights - just to break our 'new normal' up. I am trying new recipes as well as old faithful gems we all love.
I will update the blog on a daily basis and will highlight the high points as well as the low points. We are all taking turns to cook so you will see a range of menus often teenage dominated! This may also be my opportunity to teach my eldest some key recipes who is due to start university in September - fingers crossed.
