Prawn Linguine

Serves 6

Ingredients

500g linguine pasta (I prefer De Cecco pasta) 
450g raw prawns
2 tins chopped tomatoes
2 cloves of garlic
1 red chilli
1 glass white wine
2 handfuls baby spinach
OIive oil

Method

  1. Cook 500g linguine pasta according to the packet instructions. 
  2. Meanwhile heat 2 tblsp olive oil in a pan add in the garlic and finely chopped chili. for about 30 seconds without letting the garlic brown.
  3. Add chopped tomatoes and simmer for 5 mins. 
  4. Add in raw king prawns and cook over a high heat, stirring frequently, for about 3 minutes until they turn pink.
  5. Drain the linguine and add to the prawn sauce, add in 2 handfuls of baby spinach. 
  6. Stir and season with salt and pepper. 
  7. Serve with crusty bread and green salad.
