Prawn Linguine
Serves 6
Ingredients
500g linguine pasta (I prefer De Cecco pasta)
450g raw prawns
2 tins chopped tomatoes
2 cloves of garlic
1 red chilli
1 glass white wine
2 handfuls baby spinach
OIive oil
Method
- Cook 500g linguine pasta according to the packet instructions.
- Meanwhile heat 2 tblsp olive oil in a pan add in the garlic and finely chopped chili. for about 30 seconds without letting the garlic brown.
- Add chopped tomatoes and simmer for 5 mins.
- Add in raw king prawns and cook over a high heat, stirring frequently, for about 3 minutes until they turn pink.
- Drain the linguine and add to the prawn sauce, add in 2 handfuls of baby spinach.
- Stir and season with salt and pepper.
- Serve with crusty bread and green salad.
