Spanish chicken with orzo
I do love a one pot meal and this one ticks all the boxes.The rain came today for the first time in 5 weeks and so to try and hold onto some sun we injected a ray of sunshine into dinner! This recipe is adapted from a recipe a great friend of mine Becky @thehousebuild posted, I did not have all the ingredients so made a few substitutions and it was equally delicious! Here's hoping the sun comes back soon.
4 x chicken breast or boneless chicken thighs
1 x courgette
2 x red onions
1 x red pepper
1 x yellow pepper
300g orzo pasta
2 x chicken stock cubes
1000 ml water
2 tbsp tomato puree
2 tbsp Spanish smoked paprika
1 tsp dried oregano
1 red chilli optional

Method
- Chop up onions, chilli (if using), garlic, courgette and peppers and fry in olive oil until soft.
- Place in a bowl and then fry off chicken in same pan, once chicken is golden, tip back in vegetables, add paprika, oregano and tomato puree and fry for another 1-2mins.
- Add chicken stock and orzo and simmer for 10-12 mins until orzo cooked.
- Before serving, season to taste and add the basil.
