Tomato & chorizo tortellini soup

This delicious spicy pasta soup is perfect comfort food with a kick. We all love chorizo, and tortellini is one of the boys favourite things to eat. Tortellini is a great quick family dinner option and readily available in all supermarkets, I have chosen spinach and ricotta tortellini for this recipe as I think it works very well with the spicy tomato soup/sauce but you could chose any filling or ravioli if you wish. This recipe is a brilliant way to rethink your usual tortellini & pesto supper. Serve with warm crusty bread and a green salad.

Serves 4:
Ingredients
1 tbsp olive oil
1 onion
150g cooking chorizo
2-3 sprigs thyme or rosemary
700ml chicken stock
400ml tomato passata
125ml double cream
250g pack of tortellini
Fresh basil

Method
  1. Heat the oil in a saucepan and gently fry the onion for 10 mins over a low heat until softened.
  2. Add the chorizo and thyme, increase the heat and fry until the chorizo releases it’s oil. Add the stock and tomato passata and cook gently for 15 mins. Season to taste and add cream.
  3. Add the tortellini and cook as per instructions. Serve with a scattering of basil leaves.
Note: for a family of 5 I used 2 packets of tortellini.
