A recipe for Uni days! - Moroccan Tabbouleh
My eldest Zach (17) is hopefully off to university in the autumn! This is very much up in the air at the moment as it is for all A level students but we have to carry on as if it will happen - fingers crossed. So I am planning on sending him off with some pots and pans and a few recipes that I think he should be able to manage! This is a very simple, inexpensive and delicious recipe. I left the recipe for Zach to attempt and asked Sam (16) who is a keen cook and very able in the kitchen to be sous chef - well that lasted 10 mins and I had to intervene and finish the meal! Complete failure on any learning happening but I managed to rescue the dish and dinner did eventually happen. Today is a new day!
260g bulgar wheat
4 vine tomatoes chopped finely
2 cloves garlic chopped
2 tbsp Ras al Hanout
Juice & rind lemon
Handful chopped parsley
1 chicken stock cube
200ml boiling water
Method
- Cook bulgar wheat as per instructions, drain and leave to one side. Make up chicken stock.
- Fry mince until brown add garlic, Ras al Hanout and stock. Cook for a further 10 mins.
- Turn off heat add in tomatoes, lemon juice, lemon rind, bulgar wheat and parsley. Mix well.
- Serve with lemon wedges.
