Chicken, bean & spinach stew
Well it was definitely hump day here today..... I did make my kids watch Groundhog day last week so they knew what I was constantly harping on about, so hard to make plans at the moment; well it's near impossible and as someone who loves a plan it is a steep learning curve. So a hearty dish was the order of the day and this one ticks all the boxes. The addition of Chorizo elevates this dish and served with crusty bread it was a hug in a bowl. You can use frozen spinach instead of baby spinach if you have a bag lurking in the freezer.

100g chorizo skinned and chopped
550g boneless chicken thighs
400g chopped tomatoes
300g cannellini beans, drained and rinsed
200g baby spinach

Method
- Heat a large pan over a medium heat. Cook the chorizo until beginning to crisp and release oil. Add the chicken and cook for 5 mins until browned.
- Add the tomatoes, beans and spinach. Cook over a low heat for 20 mins.
- Season with salt and black pepper.
