Chocolate gooey brownies
These are seriously gooey, I really did hesitate and almost put them back into the oven for another 5 minutes cooking time but was persuaded by my kids not to, they were seeking the gooiest brownies ever and they did deliver. These were made by my eldest and so quick and easy. Served with ice cream and a few strawberries this is death by chocolate. Utterly divine and a huge hit with the teens - it will even resolve a teenage rant - we have a few Kevin moments in our house at the moment!
Ingredients
90g dark chocolate
150g unsalted butter
125g plain flour
2 eggs
15g cocoa powder
300g soft light brown sugar
1/2 tsp baking powder
1 tsp vanilla extract
1 pinch salt
100g chopped pecan nuts (optional)
Method
Preheat the oven to 180C/Gas 4. Grease and line the base of a baking tin with non stick parchment paper.
Break the chocolate into a bowl and add the butter. Melt the butter and chocolate over a saucepan of simmering water, stirring occasionally.
Remove the bowl from the heat, and allow the chocolate to cool slightly. Sieve the flour, cocoa powder, baking powder and salt into a separate bowl.
In another bowl, beat the eggs and then add the sugar and vanilla extract. Stir until combined.
Fold the melted chocolate in the beaten egg mixture. Then fold in the flour mixture and nuts.
Spoon the mixture into the tin, smooth the top with a palette knife and bake for 25 minutes. Allow it to cool in the tin before cutting into squares.
