Greek chicken and rice with Tzatziki

This is a delicious go to weekday recipe. Who does not love the mouth watering combination of lemon, chicken, garlic, olives and oregano - summer on a plate. This is a great meal to encourage kids in the kitchen as there are a few jobs involved but they are quick and very easy so perfect for roping the kids in! If you have not make tzatziki before give this a go as I promise you will make it time and again.

Ingredients

4 chicken breasts

2 tbsp oregano

3 cloves of garlic

100g baby spinach

250ml chicken stock

150g pitted black olives

360g basmati rice cooked


For the tzatziki

170g pot natural yogurt or Greek yogurt

1/2 cucumber halved and deseeded

1 small garlic clove crushed

handful mint leaves chopped

Method

  1. Make tzatziki - coarsely grate the cucumber, sprinkle with a pinch of salt and squeeze out all the liquid. Tip into a bowl with the yogurt, garlic and mint, and mix well. Leave in the fridge and while you get on with the chicken.
  2. Cook the rice as per instructions, leave to one side. 
  3. Dice the chicken and fry until brown and cooked through. Add the oregano and garlic and cook for 2-3 minutes. Stir in the chicken stock, spinach, olives and cooked rice.
  4. Cook together for a couple of minutes. 
Serve with tzatziki.
