Greek chicken and rice with Tzatziki
This is a delicious go to weekday recipe. Who does not love the mouth watering combination of lemon, chicken, garlic, olives and oregano - summer on a plate. This is a great meal to encourage kids in the kitchen as there are a few jobs involved but they are quick and very easy so perfect for roping the kids in! If you have not make tzatziki before give this a go as I promise you will make it time and again.
Ingredients
4 chicken breasts
2 tbsp oregano
3 cloves of garlic
100g baby spinach
250ml chicken stock
150g pitted black olives
360g basmati rice cooked
For the tzatziki
170g pot natural yogurt or Greek yogurt
1/2 cucumber halved and deseeded
1 small garlic clove crushed
handful mint leaves chopped
Method

170g pot natural yogurt or Greek yogurt
1/2 cucumber halved and deseeded

Method
- Make tzatziki - coarsely grate the cucumber, sprinkle with a pinch of salt and squeeze out all the liquid. Tip into a bowl with the yogurt, garlic and mint, and mix well. Leave in the fridge and while you get on with the chicken.
- Cook the rice as per instructions, leave to one side.
- Dice the chicken and fry until brown and cooked through. Add the oregano and garlic and cook for 2-3 minutes. Stir in the chicken stock, spinach, olives and cooked rice.
- Cook together for a couple of minutes.
