Mediterranean roasted vegetables with paprika chicken

A summer dish through and through. So easy one pot cooking served with lemon couscous. Simple cooking with the most wonderful flavours. A must try in the glorious warm sunshine.

Ingredients
2 red onions
1 red pepper
1 yellow pepper
1 garlic clove crushed
2 courgettes 
600g chicken thighs or breast diced
2 tbsp paprika
olive oil
salt and pepper

Serve with lemon couscous and natural yogurt

Method
  1. Preheat oven 180C/ Fan 160C/ Gas 5. Chop the vegetables into bite size pieces and place in a bowl. Add the diced chicken and toss together. Add in the paprika and olive oil. 
  2. Bake in a preheated oven for 35 mins. 
  3. While that is cooking make couscous as per instructions. Once read fluff with a fork and add in the juice and grated rind of a lemon. 
  4. Delicious served with natural yogurt on the side. I love to eat it 10 mins after coming out of the oven, equally delicious eaten cold as a salad.
