Rum & Raisin ice-cream

Simple no churn decadent ice cream - perfect for a dinner party or for getting ahead for Christmas. Only a handful of ingredients. This is sure to a hit with guests.


Ingredients 
85g raisins
125ml dark rum
395g can condensed milk
600ml double cream
1 tbs instant coffee,
dissolved in 2tbs boiling water, cooled. 

Method
1. Soak raisins in rum for at least 4 hours or overnight.
2, Using electric beaters, whish together condensed milk and cream to soft peaks. Gently fold in the raising and coffee mixtures. Transfer to an airtight container and freeze overnight.

Makes 1.2 litres.
